 Slow Food Hudson Valley Spring Foraging Walk

Join us at Overlook Farms in East Chatham, NY, on Sunday, April 28th, from 12 to 3 PM for a rejuvenating Spring Foraging Walk. Explore the abundant wild plant-based foods of the Hudson Valley alongside our knowledgeable guides – Josh Rosas, a seasoned farmer and forager, and his wife, Kristen Rosas, a passionate forager with extensive experience in wild edibles.

During this immersive experience, you'll learn the art of sustainable and respectful harvesting while discovering the unique qualities of wild plants like Stinging Nettles, Japanese Knotweed, Garlic Mustard, Ramps, Ostrich Fern, Dames Rocket, Violets, and possibly Golden Oyster and Pheasant Back Mushrooms. Josh and Kristen will share insights on identifying these plants and offer practical tips on incorporating them into your diet for nourishment and medicinal benefits.

The walk will culminate in a meaningful discussion on the significance of honoring wild foods, reflecting Slow Food's commitment to showcasing the richness of the Hudson Valley's foraged bounty. To top off this enlightening excursion, we'll indulge in a tasting session featuring prepared items from pre-foraged treasures.
